Description:
Quinoa (pronounced keenwa) is a small, flat, disk-shaped seed, ranging in colour from yellow to orange, red, pink, purple and black. Not actually a cereal grain, quinoa is the fruit of an annual herb of the Chenopodiaceae family. There are hundreds of different strains of quinoa, all differing somewhat from each other in colour, shape and flavour. As some of the bitter outer covering of quinoa may be present, you should thoroughly rinse the dry grain until the water runs clear before cooking. Quinoa can be used in the place of rice or couscous, be cooked in soups and stews, and ground into flour for breads and biscuits. It has twice the protein of barley, corn and rice and is a good source of calcuim, iron, vitamin E, phosphorous and some B vitamins. Cooking: |
