Thought to be the oldest cultivated grain, barley is available in several forms. Most grown in the United States is processed. The unprocessed grain has a thick hull and tough outer layers (called aleurone cells). While an asset for malting, these layers make cooking and digestion difficult. For this reason, barley is pearled, that is, scoured with abrasives. It can be added to casseroles, used to thicken soups or stews, or served alone.

Barley flakes are produced from grains for lightly pearled barley that are gently toasted, then flaked in a roller mill. They can be used like oat flakes (or oatmeal) or added to soups, casseroles, or bread recipes for the texture and pleasing taste of barley without the long cooking time.
