RED LENTIL CURRY (serves 3)

This is one handy dahl, as red lentils only take 15 minutes to cook.

2 tbsp oil (H59) 1/2 cup onion, finely chopped
1/2 cup celery (1 stalk) chopped
1 tbsp curry powder 1 red capsicum, chopped
1 cup dry red lentils, rinsed (P02) 2 cups water
2 tbsp miso (G64) Fresh parsley for garnish

1. Heat oil in heavy pan . Add onion, celery and curry powder. Stir and saute over high heat for 5 mins (until vegetables become tender).
2. Add capsicum and stir for 1 more minute. Add lentils, mix well and add the water. Stir and cover.
3. Bring water to a boil, then reduce the heat and simmer, stirring occasionally, for 15-20 minutes or until the lentils are tender and the water has been absorbed.
4. Remove the pan from heat and add the miso. Mix well.
5. Serve on a bed of brown rice and sprinkle with the garnish.
