APPLE PANCAKES (makes about 12)
When I was young my Mum would make me apple pancakes with sliced apple inside and I thought she was just so clever. These pancakes are a more complex and more delicious version.
1 package firm silken tofu
1 tsp vanilla (Z20)
1 cup w/w pastry flour (G33)
2 tsp baking powder (G04)
1 tsp cinnamon (Z18)
1 cup grated apple
2 cup raisins (optional, F20)
1/4 cup soymilk or water (D20)
1. Place tofu, soymilk or water, and vanilla in food processor or blender. Blend until smooth and creamy.
2. Combine flour, baking powder and cinnamon in a large bowl. Add the blended tofu and mix well. Add the grated apple and the raisins. Mix again. (The batter should be thick.)
3. Drop the batter, 1/4 at a time, onto a hot, oiled pan. With the back of a spoon, spread out each pancake as much as you can. Cook about 3 pancakes at a time over med, heat until they are brown on the bottom. Turn them over and cook on the other side.
4. These are good served plain, or with a fruit spread, ice cream ore honey.
